We opened our restaurant in May 2013 so that everyone can enjoy the kakioko served at the B-1 Grand Prix, Bizen Pottery Festival, Okayama Marathon, etc. We spent more than three years perfecting our kakioko, paying particular attention to the balance of the dough, the mixture, and even the way the cabbage is cut. The sauce is made with local soy sauce from Bizen. The sauce is made by Takatori Soy Sauce, a local soy sauce brewery in Bizen.
