Anago (conger eel) is made by carefully grilling fresh conger eel one by one with homemade sauce. It is an indispensable part of Matsuri Sushi. It is also very good grilled and served with wasabi soy sauce. Smaller ones can be served as tempura or nandoki. It contains fewer calories than eel, but is rich in nutrients.
